Je suis en retard!

Alas, I'm posting these delicious galette des rois a few days after Epiphany, but hope that you found the fêve and are wearing your crown proudly.

6 janvier, Epiphany, is celebrated in France with these lovely galettes made of the lightest and most  buttery crust filled with a delicious frangipane (almond cream). Epiphany is the celebration of the arrival of the three kings to visit the baby Jesus. Someone will get the tiny baby figurine in their piece and be crowned with the gold paper crowns that accompany every cake.  Of course as Peter Olson would point out, it must include a nice glass of champagne!
