Epiphany, is celebrated in France with these lovely galettes made of the lightest and most buttery crust filled with a delicious frangipane (almond cream). Epiphany is the celebration of the arrival of the three kings to visit the baby Jesus. Someone will get the tiny baby figurine in their piece and be crowned with the gold paper crowns that accompany every cake. Of course as
Peter Olson would point out, it must include a nice glass of champagne!
We celebrated with the neighbors on Sunday. It was a lot of fun, but I didn't get to be crowned. Wait'til next year as they say.
